Ingredients

For the syrup
- 500 gr. HATZAKOU kataifi pastry
- 250 gr. Fresh milk butter
- 250 gr. Walnuts
- 100 gr. Breadcrumbs
- 1 tsp Cinammon

For the syrup
- 1120 gr. Sugar
- 190 gr. Glucose
- 800 ml. Water
- 1 Vanilla extract pod
- ¼ Cup of lemon juice
Prepare the filling by mixing the walnuts, breadcrumbs and the cinnamon. Separate the kataifi pastry into long strips.
Place some of the filling along the edge of the pastry and roll up each strip gently.
Butter a tray and place the kataifi inside in neat rows. Melt butter in a separate pan and brush each kataifi in the tray well. Bake the kataifi in a preheated oven at 200Co for an hour.
SYRUP: Boil all the ingredients for the syrup for 15’. Take off the heat.
Pour the HOT syrup over the COLD kataifi.
